Our Story

It started with
dinosaurs.

During the pandemic, Len was looking for a way to bring some brightness into difficult days. She turned to her kitchen — specifically, to a strawberry shortcake with hand-sculpted fondant dinosaurs for her son's birthday. The cake disappeared in minutes. The feedback was unanimous: wonderfully light, easy to eat, perfectly balanced, never too sweet.

Len had been following a simple principle she now calls “flavour separation”: rather than blending every ingredient into one undifferentiated sweetness, she lets each one stand on its own. You taste the strawberry. Then the fresh cream. Then the airy sponge beneath. Three distinct moments in every bite.

Requests started coming in. First from friends. Then from friends of friends. Then from neighbours. Then from people she'd never met. What had started as a way to bless her family became a way to bless her community.

That's the heart of Salt and Light Bakehouse Co. The name is drawn from Matthew 5:13–14 — salt as something that brings distinct, memorable goodness to everything it touches, and light as a force that spreads pure joy. Both invisible, both essential.

Len still makes every cake herself. The recipes are hers. The technique is hers. The care is entirely, unmistakeably hers.
